Ingredients

  • 1 cup unsalted butter, softened
  • 1/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 tablespoon whole milk
  • 2 teaspoons pure vanilla extract, divided
  • 1 cup raw pecans, finely chopped
  • 1/2 cup light brown sugar (for filling)
  • 1/4 cup dark corn syrup
  • 2 tablespoons unsalted butter (for filling)
  • 2 tablespoons heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, 1/4 cup light brown sugar, and granulated sugar for 2-3 minutes until pale and fluffy.
  3. Gradually add the flour and salt on low speed, then mix in the milk and 1 teaspoon of vanilla until a cohesive dough forms.
  4. Roll 2-tablespoon portions of dough into balls and place them 2 inches apart on the baking sheets; press a thumbprint into the center of each.
  5. Bake for 12-15 minutes, rotating the sheets halfway through, until the edges are a light honey-gold.
  6. Re-press the indentations with a spoon while the cookies are still warm, then set aside to cool.
  7. In a medium pot over medium heat, combine the pecans, 1/2 cup brown sugar, corn syrup, and 2 tablespoons of butter, stirring for 5 minutes.
  8. Whisk in the heavy cream, simmer for 2 minutes, then remove from heat and stir in the remaining teaspoon of vanilla.
  9. Spoon the warm pecan mixture into each cookie well and let them set for at least 15 minutes before serving.

Notes

For the cleanest thumbprint shape, ensure your butter is at true room temperature rather than slightly melted, which prevents excessive spreading. If the pecan filling begins to set too firmly in the pot before you finish filling the cookies, a very brief reheat on low power will restore its pourable consistency.
